Blueberry Loaf Bread

Blueberry Loaf Bread

1/2 cup butter soft
1 cup sugar
1/2 cup milk
2 eggs
1 tsp. vanilla
1 3/4 cups of all purpose flour
1 tsp. baking powder
1 cup fresh blueberries (sometimes I use thawed frozen berries, just drain off the juice)

For top of bread mix some cinnamon and sugar

Beat butter,sugar,eggs, milk, vanilla. Add flour, baking powder. Fold in Blueberries. Pour into a greased and floured 9x5x3 inch loaf pan. Sprinkle cinnamon and sugar on top. Bake at 350 degrees for an hour or until knife inserted in middle comes out clean.Please let bread cool off completely in pan before removing.

This can be wrapped and frozen then thawed to use later for a quick dessert~

Granny's Banana Bread

Granny's Banana Bread

Ingredients:
Mix separately, 1 1/2 cups oatmeal
1/2 cup brown sugar
1 stick of soft butter. Set aside/

Batter Ingredients:
1 cup sugar
1/2 cup soft butter (one stick)
4 large ripe bananas, smashed
1 1/2 Tablespoons of milk plus 1 tsp. of lemon juice added to it
Mix and add;
2 beaten eggs, then;
2 cups of all purpose flour, 1 1/2 tsp. baking powder, 1/4 tsp. salt, 1/2 tsp. baking soda. You may add  1/2 cup finely chopped pecans if you want to.
Spray your bread pan with cooking spray and flour gently. Add 1/3 of the oatmeal mixture to the bottom of pan.  Put in ONLY half the batter and another 1/3 of oatmeal mixture, top with rest of batter and then lastly with the oatmeal mix. Bake @ 350 degrees for 1 hour and then keep checking it for doneness by inserting a knife in center if it comes out clean it is done. This usually makes one loaf with some batter left over which I put into a small pie pan and bake first but be careful this one is ready in only 15 minutes. After removing from oven let the bread rest in the pan until completely cool about an hour or more then invert onto plate.

Bottom of loaf all gooey with goodness~

Top of loaf.

In the Same Pan Cake

2 1/2 cups all purpose flour,1 1/2 cups sugar, 1/2 cup cocoa,
2 tsp. baking soda,1/2 tsp. salt, 2/3 cup oil,2 Tbsp. cider vinegar, 1 Tbsp. vanilla, 2 cups cold coffee, 1/3 cup sugar and 1/2 tsp. cinnamon.

You DO NOT mix it in a separate bowl you mix it in the pan that you are baking it in! Add all dry ingredients EXCEPT 1/3 cup sugar and 1/2 tsp. cinnamon into a 12 x 8 inch ungreased pan.
Mix in liquids. Combine sugar and cinnamon and sprinkle half over cake and bake at 350 oven for 35 to 40 minutes. While cake is stil hot sprinkle rest of cinnamon sugar mix.Cover with aluminum foil. Cool at least 20 minutes. Enjoy! I took this picture too soon but the sugar topping melts into the top and becomes super moist~

Triple Chocolate Cookies

Triple Chocolate Cookies
1 cup of soft butter, 1 cup oil, 1 cup light brown sugar, 1 cup granulated sugar, 1 egg, 1 tsp.milk, 1 tsp. pure vanilla. Cream altogether add: 1 tsp. baking soda and 1 tsp. salt and 4 1/2 cups of all purpose flour. Batter will be thick. Add 1/2 bag each ( 12 oz.) of Milk chocolate chips, mini morsels chocolate chips and chocolate chunks. Bake in 350 degree preheated oven on ungreased cookie sheet. I bake mine for 5 minutes or until outside edges are brown and tops are not gooey looking. Do not overbake. I let mine sit on pan until cooled. Good luck and have some chocolatey fun!
